Guinea pepper or Melegeta or Grains of Paradise or Alligator pepper as it has been called in Europe made its way westward via caravans from the Sahara.

Used as a substitute for the rare and expensive black pepper, it eventually found favor as black pepper became more widely available. Even so, it remained a common ingredient in English recipes until the 19th century.

Today, Guinea Pepper originated in West Africa. Ghana, Liberia and the Ivory Coast are all producers, but most is produced in Ghana.

Taste profile of Guinea Pepper

The aroma of Guinea pepper has been likened to a mixture of black pepper, lemon zest and cardamom. When bitten, they give a mild heat similar to that provided by black pepper, but not as harsh. On the tongue, they offer a flavor that has strong notes of cloves and cinnamon on a mild background of cardamom. The heat from the beans tends to be lingering but not uncomfortable.
