Averrhoa bilimbi, commonly known as the bilimbi or cucumber tree, is a tropical fruit tree that is native to Southeast Asia. It is a small to medium-sized tree, recognized for its elongated fruits and tart flavor.

 

The bilimbi tree has slender branches with compound leaves that resemble fern fronds. It produces small, cylindrical fruits that are usually about 4 to 10 centimeters long. The fruits have a waxy, green skin and a crisp, crunchy texture. When fully ripe, the skin turns a pale yellowish-green color. The flesh of the bilimbi fruit is translucent and juicy, with a sour and tangy taste that is often compared to that of a green, unripe mango or a lemon. It is commonly used in savory dishes, pickles, and sauces.
