The Thyme Honey from Psara Island, famous since many centuries, fascinated those who tried it.
In Psara only this Thyme Honey is been produced.
Although the equipment for the honey production is modern,
bee handling remains the same as our grandparents did it.
Even today an important quantity of honey is being left to every colony,
so that it flourishes and overcomes winter.
In this way the honey production is less, but it is pure and of very high quality.
The bees remain throughout the year at the same place in Kalafatis area in Ftelio, Psara.
The honey harvest is made traditionally once per year at the end of August,
when the bees have collected all the honey from Psara thyme.
The pollen analysis showed in 2015 that this honey contains thyme 91%, when,
according to the law, every honey with> 18% thyme can be characterized as thyme honey.
The Psara Thyme Honey is not heat treated and therefore maintains all the nutrient elements
