Yes, you can specify certain items.

Go to your Selling drop down in the upper left corner of your page. Click on Batch Edit. Next, click on Search Optimize near the upper left side of the page. You will then see “Suppress GPS submission” with Enable and Disable close to where you saw Search Optimize.
Pick a listing that you do not want to go to Google Shopping. Then click on Enable and click the green button that says Apply Changes. Your item will then no longer be sent to Google Shopping.
